Founded and led by chef Jose “Chemma” Vargas, a culinary craftsman with deep roots in family recipes and a lifelong passion for real, simple ingredients, the company is defined by authenticity, attention to detail, and a commitment to a memorable guest experience.
Chemma grew up watching tortillas shaped by hand and grilled on a comal, learning techniques passed down through generations. That upbringing instilled a respect for craft and seasonality and a belief that great food starts with honest ingredients and careful preparation. Before launching the catering company, Chemma honed culinary skills in catering large events and serving in community pop-ups, refining the balance between efficiency and the slow, tactile work of serving freshly-prepared food. Those formative years crystallized a mission: to revive the ritual of handmade corn tortillas and to share the warmth of home-style Mexican flavors in a professional, reliable catering format.
